Its not so much a "recipe" as it is just a
fun thing to do with cupcakes...something my mom used to do for me for my
birthday around Easter time. Turn ordinary cupcakes into Easter
baskets with coconut "grass", jelly bean "eggs", and pipe cleaner basket
handles. |

- Make
cupcakes according to instructions on the box. .
- Allow them
to cool to room temperature.
- Add several
drops of blue and yellow food coloring to the vanilla icing and beat until
well-blended to a nice green color.
- Also add
food coloring separately to the shredded coconut and mix together until the
coconut is all green.
- Ice the
cupcakes, then spread some coconut on the tops.
- Push three or
four jelly beans into the icing of each cupcake.
- Anchor a bent pipe cleaner into the
cupcake to make a handle.
