Picnic S'mores

    | 
     Makes 3 dozen sandwich cookies.  See 
	options below.  | 
   
  
	| Quantity | 
	Ingredients | 
	
    Preparation Notes | 
	 
  
	| 3/4 C | 
	Shortening 
	(softened) | 
	
    -   Beat shortening until creamy
 
    -   Blend in peanut butter, sugars, eggs and milk
 
	-   Sift together salt, soda and flour.  Add to 
	creamed mixture.
 
    -   Beat until smooth
 
    -   Stir in oats
 
    -   Roll out on lightly floured board to 1/8th inch 
	thickness.
 
    -   Cut with floured round cookie cutter.
 
    -   Place rounds on greased cookie sheek and bake in 
	350° oven for about 10 minutes.
 
    -  Remove from cookie sheets and cool
 
    -  At picnic, place four squares of chocolate bar and 
	a toasted marshmallow between two cookie rounds and press together.

    Options: 
	1.  Place slice of ice cream between cookies and press together. 
	2.  Instead of using round cookie cutter, cut dough into 3 x 1 inch 
	strips, use pudding in between
