	Night of Discovery Dinner celebrating Columbus Day  
	4 to 6 
	servings.  |

    Preparation Notes | 
	 
  
	| 2 Tbsp | 
	Olive Oil | 
	
    -   Heat oil in 10" skillet until hot.
 
    -   Add garlic, cook and stir over med heat for 1 
	minute
 
	-   Add mushrooms, cook and stir for 2 minutes
 
    -   Reduce heat
 
    -   Stir in remaining ingredients except parsley, cook 
	for 2 minutes
 
    -   Put on serving dish
 
	-   Sprinkle with parsley
