Siamese Surprise Dinner

Whole Chicken
Breasts boned and skinned |
- Cut chicken breasts into long strips - 1/2 to 3/4
inch wide
- Mix with salt and pepper
- Combine remaining ingredients in a medium size
bowl
- Stir in chicken
- Cover and marinate in refrigerator 4 - 6 hours
- Bring to room temperature before grilling
- Make Thai Satay Sauce
- Prepare grill, coals should be very hot
- Set grill close to coals
- Thread chicken onto 16 skewers
- Grill chicken 5 - 8 minutes on each side or until
fully cooked, turning as needed. Do not overcook.
- Serve with Thai Satay
Sauce.
